  • 1 pound of BSW Krainerwurst Sausage (room temperature)
  • 8-10 oz of Sharp Cheddar Cheese, shredded
  • 2 cups Bisquick baking mix

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a large bowl, mix cheese and Bisquick thoroughly (easiest with hands)
  3. Add sausage, mixing thoroughly (easiest with hands)
  4. Once mixed, shape into balls (a little smaller than golf balls)
  5. Place sausage balls half inch apart on baking sheet and let cook for 20 mins
  6. Serve hot and enjoy!

  • 4 cups water
  • 2 whole potatoes, halved and sliced
  • 2 cups sliced kale
  • 1/3 cup heavy cream
  • 3/4 cup diced onion
  • 1 tablespoon vegetable oil
  • 1 ¼ teaspoon minced garlic
  • 2 tablespoons chicken soup base

Directions

  1. Preheat oven to 300 degrees Fahrenheit
  2. Place sausage links on baking sheet and let bake 25 mins
  3. Once cooked, slice sausage into ½ inch pieces, set aside
  4. Heat vegetable oil in large saucepan over medium heat
  5. Sautee diced onions, add minced garlic, and let cook about 1 minute
  6. Stir in broth, water, and potatoes. Let simmer 15 mins
  7. Reduce heat to low, add sliced sausage, kale, and heavy cream
  8. Let soup simmer until heated through

Directions

  1. Heat olive oil in large skillet over medium heat, add sausage and cook until browned on all sides. Once cooked, remove sausage from pan and set aside
  2. Use 1 bottle of beer to deglaze the pan
  3. Place sliced red peppers, green peppers, and onions in the pan over medium heat. Stir in remaining bottle of beer and tomato paste. Season with oregano, hot sauce, cilantro, salt, and pepper
  4. Cover and let simmer until onions and peppers are tender
  5. Slice sausage into ½ inch-1 inch pieces and add to pan

  • 3 lbs uncooked medium shrimp, peeled and deveined
  • 1 lb lump crabmeat
  • 1 cup all-purpose flour
  • ¾ cup bacon drippings
  • 2 tablespoons bacon drippings (separate from the ¾ cup drippings)
  • 1 cup celery, coarsely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, coarsely chopped
  • 4 bay leaves
  • 6 cubes beef bouillon
  • 1 tablespoon sugar
  • 1 (1.45oz) can stewed tomatoes
  • 1 (6oz) can tomato sauce
  • 2 (10oz) packages frozen cut okra, thawed
  • 4 teaspoons gumbo file powder
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons distilled white vinegar
  • ½ teaspoon dried thyme leaves
  • 2 tablespoons hot pepper sauce
  • ½ teaspoon Cajun seasoning blend
  • 3 quarts water
  • Salt for seasoning

  • Make a roux:
    In a large saucepan, whisk flour and ¾ cup bacon drippings together over medium-low heat. Let cook, whisking constantly, until rich brown color is achieved (20-30 mins).
  • Remove from heat and continue whisking until mixture stops cooking.
  • Using a food processor, mix and pulse the celery, green bell pepper, onion, and garlic until finely chopped
  • Stir vegetable into roux, mix in sliced sausage, and bring to a simmer over medium-low heat. Cook until vegetable are tender (10-15 mins). Once tender, remove from heat and set aside
  • In a large Dutch oven or soup pot, bring water and beef bouillon cubes to a boil
  • Stir until bouillon cubes are dissolved, and whisk the roux into the boiling water
  • Reduce heat to a simmer, mix in salt, sugar, Cajun seasoning, hot pepper sauce, thyme, bay leaves, stewed tomatoes, and tomato sauce
  • Simmer over low heat for 1 hour; mix in 2 teaspoons of file gumbo powder at 45-minute mark
  • While the gumbo simmers, melt 2 tablespoons of bacon drippings in a skillet
  • In skillet, cook okra with white wine vinegar over medium heat for 15 mins
  • Remove okra with slotted spoon, stir into simmering gumbo
  • Mix in shrimp, crab meat, and Worcestershire sauce, let simmer for 45 mins
  • Before serving, stir in 2 more teaspoons of file gumbo powder
  • Serve hot and enjoy

Ingredients

  • 16 oz of BSW Sliced Bacon (Use any variation of BSW Bacon for substitute)
  • 3 lbs of BSW Smoked Ham, cubed
  • 10 potatoes, peeled and sliced
  • 2 onions, sliced
  • 2 (16oz) packages shredded cheddar cheese
  • 2/3 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons salt
  • 2 tablespoons ground black pepper

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Fry bacon in a large skillet over medium-high heat until slices begin to brown (about 5 mins)
  3. Once brown, drain bacon grease on a paper towel-lined plate
  4. Place the brown, partially cooked bacon on the bottom of a large roasting pan
  5. In a mixing bowl, whisk flour and milk together. Set aside
  6. Layer 1/3 of the potatoes over the bacon
  7. Layer half of the onion on top of potatoes
  8. Layer half of the ham on top of onion
  9. Layer ¼ of the shredded cheddar cheese on top of ham
  10. Pour 1/3 of the milk and flour mixture over the cheese layer. Season with salt and black pepper
  11. Repeat the layering (potatoes, onion, ham, cheddar cheese, milk and flour mixture, and salt and black pepper)
  12. Place the final 1/3 of potatoes, then evenly pour the rest of the milk and flour mixture on top
  13. Spread the remaining cheddar cheese on top
  14. Bake until potatoes are tender (about 2 hours)

  • ½ cup Swiss cheese, shredded
  • 2 tablespoons milk
  • 2 tablespoons green onion, chopped

Directions

  1. Preheat oven to 375 degrees Fahrenheit
  2. Lightly grease 10 muffin tins
  3. In a large skillet, fry bacon over medium-high heat until crisp and brown. Drain grease, crumble, and set aside
  4. In a mixing bowl, add milk, cream cheese, and eggs. Beat on low until smooth
  5. Stir in green onion and Swiss cheese. Set aside
